Food Edition : 배추 김치 ( Bae Chu Kimchi ) / Cabbage Kimchi #KoreanSpeciality


Bae Chu Kimchi or Fermented Cabbage. Been a while since i've known Kimchi as one of Korean tradisional side dish. They have hundreds recepy of kimchi. And there are special ways to make and to ripen so we can taste the best of it. 

But, I'll try to make a simple and easy one. I'm not sure the taste will be as good as the real one. Since i don't know how kimchi taste, i never tasted it before. So hope we have a good luck with this one :D



Ingredients :

2 Napa Cabbage / sawi putih
10 cups water
8 green onion / bawang daun. Cut sliced
1 onion / bawang bombay
1 whole ginger. Peeled. ( I put 1 tablespoon ginger powder insted. I use what i have in the kitchen :P )
1 fuji apple ( I use 1 apple )
1 apple pear ( I use 1 Pear )
Whole garlic. Peeled
1 cup red pepper flakes
4 tablespoon sugar 
1 cup salt
7 tablespoon fish sauce



To Make :

1. Cut napa cabbage as you can see in the picture above
2. Put water and mix it with salt in a big bowl
3. Mix them all together well and leave it for around 3 hours. Dont forget to mix it once in an hour so it can mix well. When it finish wash it 3 times in cold water. Dry it
4. Blend onion, garlic, sugar, fish sauce, pear, ginger and apple. Put it in a bowl and mix it with red pepper flakes and green onion
5. Mix them all together. Dont forget to use gloves
6. Put it in a jar ( glass one is better ) I keep it in tupperwear, so after it finish you have to know that it's going to be ¨Kimchi Tupperwear Only¨ for later ( you¨ll have the kimchi smell on it ) . Keep it in the fridge for a week. It's worth waiting for :De ready to have the kimchi smell in your fridge. But if you use the glass jar and it well closed. It'll help. The best way ( what i did ) you can put it in your garage with this autumn - winter temperature.

The spicyness you can arrange in the amount of the red pepper flakes :)
The fresh kimchi taste is really good. Since i just make it today so lets hope that it can taste better in a week. *exited
